Pasta Nom (with White Wine Garlic Sauce and Chicken)

I've been in the mood for a good pasta dish lately, but my hubby's aversion to cream sauces left me intent on a savory recipe he would enjoy, too. This came out great, the chicken was so tender and juicy and the sauce was good enough to lick the plate once you've finished eating!

Fluffy Baked Mashed Potatoes

Since I really only grilled up a steak tonight, I thought I'd share a side dish. We love potatoes at my house, and mashed potatoes are my personal favorite. This is a nice change from the usual! I'm also not much a fan of spice blends, but included a recipe for cajun seasoning in this post, as I find myself using it more and more to get that little extra kick!

Panda Orange Chicken

This is one of my very favorite recipes! It can be time consuming, but the finished product is well worth it. I've had a kick of trying lots of Asian recipes and flavors lately, my husband jokes that our kitchen cabinets look like an Asian market! This recipe is definitely #1 in my book, though. It's better than any Chinese food I've ever had in a restaurant.

Poulet Bonne Femme

Sorry for my delayed absence. Being a new mom has not stopped me from cooking everyday, but it did put a kink in my on-line social life. (I had a girl on 2/19! ) I promise to try and be more vigilant in the future. This was our dinner last night. I don't know any french but the name to me sounds like "Pretty Female Chicken"??! I have no idea, I just know I started out with a basic recipe and edited away! The gravy it makes is good enough to be bottled and sold. You will lick your plate!

The Best Chicken Enchiladas (with Red Sauce)

This is probably my favorite recipe in the world. Every time I make it, I gorge myself sick. As with my other recipes, it's a collaboration of different things I've tried, especially the sauce. I used to use a dry seasoning packet but my grocery store took it off the market and I was forced to experiment with my own blend. This is one of those dishes I could make every night. Yum!!

Chicken Stir Fry with Fish Sauce

Last trip to the grocery store, I grabbed a bottle of what I thought to be oyster sauce- only to realize later that it was fish sauce and that fish sauce was completely different. I was able to find a whopping 2 or 3 recipes on-line that use fish sauce with chicken, so I decided to use them as a guideline and create my own. Served over white rice, this was terrific! The ginger added a nice heat to the dish and the sauce was completely yummy.

Chicken Scarpariello

This is a recipe I've been meaning to try for quite awhile and finally got the chance! I looked at several different recipes on-line and then made my own variation. The chicken was really delectable, the ingredients sound simple but they really soak into the meat, giving it a savory, delicious flavor. It would probably be just as good served over rice as over pasta.

Breaded Cube Steaks

I remember eating this a lot growing up and decided to tackle it on my own. Unfortunately, I didn't count on running out of propane for my cooktop partway through frying and having to rely on my ancient, legless, electric frying pan to finish the job. Regardless, it turned out well and made a believer of my husband who was uncertain about the breading from the get-go. I suppose this could be served with milk gravy ala chicken fried steak as well!

Awesome Sauce Feta Cheese Chicken

Well, hi! I've been gone for ages, I know. Still no baby, but at least the internet is back. The trials of being poor, I suppose.

I HAD to share this new recipe, born of my having a tub of feta cheese in my fridge that was serving no purpose other to satisfy my salt cravings by the handfuls of it's crumbly goodness. Anyway, Oh My Dog- the sauce in this recipe is SO good, I could eat just that. Pour it into a bowl and eat it with a spoon. DELISH!!

Oriental Pork Sirloin Steaks in the Crockpot

My father-in-law appeared this morning bearing the gift of pork. I have never worked with boneless sirloin steaks in my life, so this recipe was made in part by surfing the web (and let me tell you, the recipes already out there are negligible! I found close to nothing for this cut! ) but mostly by creative substitution using what I had on hand.

Middle School Coffee Cake

First of all- YAY! icon_razz Today I bought a convection toaster oven from a craigslist user for $35! I am in love! The stainless steel model I've been drooling over for months is now mine- all mine!! Of course I had to try it out right away, so I decided to make my first full-sized cake since the range broke. I've had this recipe since middle school home ec class. The only change I've made through the years is to the topping, which I upped the sugar and flour so there is MORE. YUM!

Souper Six Layer Leftover Casserole

We eat an exorbitant amount of boneless, skinless chicken breasts at our house. I buy bags of the little buggers in the frozen foods section. They are so easy to work with and the culinary possibilities are endless!

Anywho, this recipe is the ultimate in Getting Rid of Leftovers. You can make this whole dish from castoffs of previous meals lurking in your fridge. I had the idea for it last night when trying to come up with a last minute chicken dish. There was NO leftovers- I had thirds!
